The fish

Mahi and wahoo on the humps, sailfish along the color change in winter, swordfish thirty miles out in the dark. These fish came off the water you'll fish: Alligator Reef, the Islamorada humps, and the deep edge where the bottom falls away to blue. The Sport Fishing Capital of the World earns its name. You'll see why thirty minutes off this dock.

The table

Your fish goes from the reef edge to a plate fast. Cleaned at the dock, or cooked before you get back. On a chef-catered trip, the chef cooks while you're still fishing: ceviche from what just came over the rail, hot plates out of the kitchen. Or the Islamorada Shrimp Shack will cook what you land.
